Uncle B's Easy-Breezy Eggbake
As per *Peachy's* request...
Ingredients:
3 eggs
1 10oz frozen chopped spinach drained, squeezed dry
1/4 c milk
1 c ricotta cheese (soft)
3-4 green onions (or, 1 fried onion)
3/4 c cheddar cheese
1/2 c zucchini
1/2 c red pepper
1 tbsp fresh basil (or, 1 tsp dried basil)
Directions:
- preheat oven to 375
- break eggs in bowl and mix all ingredients
- grease 9" pie plate and pour in mix
- bake for 30 mins (tin) or 40-45 mins (glass or ceramic)
- done when fork comes out clean!

So we're unoriginal.
